Sotomayor Sotol Texano is a limited edition built on Dasylirion texanum, one of the rarest of the desert spoon species and a plant that can take decades to mature. Sotol is not a mezcal and not an agave spirit, it is distilled from Dasylirion, a separate desert lineage, and this bottling is positioned as the most complex in the Sotomayor range.

Unusually for the category it is triple distilled, which yields a clear, clean spirit. Texanum tends to a drier, leaner, mineral desert profile, and the house suggests it neat at room temperature or on the rocks, with fruit such as apple dusted in scorpion salt alongside. Bottled unaged at 48 percent to keep the desert spoon character front and centre.
