Description
Sota els Àngels is a small winery in Baix Empordà, on the north side of Les Gavarres, a rocky range of holm oak and cork trees. María Jesús Polanco and Guy Jones farm eight hectares organically and by biodynamic methods, with Fredi Torres now guiding the wines. Flow Blanco is a white made from red grapes, Cariñena and Garnacha Tinta, pressed gently so the juice runs off the skins with little colour. Empordà lies on the Costa Brava under the Tramontana wind, which sweeps the vineyards dry and cool and helps hold acidity through a warm Mediterranean season, while the granite and schist soils of Les Gavarres give a mineral edge. This is a natural wine fermented with native yeasts and aged six months on its lees in stainless steel, with no oak. The lees contact adds a light creaminess and roundness while keeping the wine bright and unadorned. Expect a pale colour and a fresh nose of lemon, green apple and white flowers with a savoury herbal thread, and a taut, saline palate with a faint red-fruit trace from the grapes. Serve chilled at 9 to 11 degrees. Natural and vegan.
