Description
Son Prim is a small family run winery in Sencelles, in the interior of Mallorca, founded in 2003 around vines planted in the 1990s. The eight hectare estate sits on varied soils where red clay with gravel and boulders dominates, giving good drainage and warmth that drive full ripeness in the Mediterranean climate. The grapes are hand harvested and selected in both vineyard and winery, with a long maceration to draw colour, fruit and tannin from the skins. The wine is then aged twelve months in French, American and Hungarian oak, the mix of woods adding layers of vanilla, sweet spice and a fine toast. At 15 percent alcohol this is a warm, generous Merlot. It is deep, almost opaque purple. The nose is intense, with ripe blackberry, black cherry and plum over dark chocolate, coffee and oak spice. The palate is full bodied and rounded, the ripe tannins carrying a long, warming finish. Serve at 17 to 18 degrees and decant before serving. It is built for grilled red meat, lamb and hard cheese.
