Description
Son Prim sits at Sencelles in the interior of Mallorca, where the Llabrés family has grown French grape varieties under the Mediterranean sun since planting experimental vines in the 1990s and building the winery in 2004. The warm island climate, tempered by sea breezes, ripens the Chardonnay fully and gives generous stonefruit, while low yields and careful selection keep the fruit concentrated. The grapes are cold-fermented at low temperature, a method that preserves the primary fruit aromatics and the wine's freshness, and the wine is raised to keep the focus on that ripe fruit rather than heavy oak. The colour is bright golden yellow. The nose is aromatic and generous, with ripe peach, fig and honey over pear, melon and a note of white flowers. The palate is round and silky, with the honeyed richness of a warm-climate white balanced by a gentle line of acidity that keeps it fresh through a clean finish. At 14.5 percent it has real body while staying poised. Serve at 10 to 12 degrees.
