Description
Son Prim Cabernet Sauvignon is a red wine from V.T. Mallorca, made by Son Prim, a small family winery in Sencelles that started in 2003. The fruit comes from an eight-hectare farm planted in the nineties, where red clay soils mixed with gravel and large stones predominate. The stony clay drains well and holds daytime warmth, helping Cabernet Sauvignon ripen fully on the island, where Mediterranean sun and sea breezes give long, even growing seasons. The high alcohol of fifteen percent reflects that ripeness. Grapes are hand-harvested into boxes and selected in both vineyard and winery before fermentation. The wine ages for twelve months in oak barrels, which round out the firm Cabernet tannins and add vanilla and a layer of sweet spice while the dark fruit stays in front. It shows a deep colour and aromas of ripe blackcurrant, plum and dark cherry over cedar and gentle spice. The palate is full and structured, warm and ripe, with firm tannins and a long savoury finish that carries the variety's typical cassis and herbal edge. Serve at 16 to 18 degrees and decant; it suits grilled and roasted red meat.
