Description
Son Prim is a family estate at Sencelles in the interior of Mallorca, where Jaime Llabrés planted an experimental plot of French varieties in the early 1990s to test how they took to the Mediterranean climate. This wine is a blanc de noirs, a white pressed from red Merlot grapes: the juice is drawn off the dark skins with little or no contact, so it takes almost none of their colour or tannin and keeps the fresh, aromatic character of a white. It is fermented and aged in stainless steel at controlled temperature, which locks in the primary fruit and floral aromatics and keeps the wine crisp and unoaked. The warm island climate, cooled by sea breezes, ripens the fruit generously. The colour is pale, bright yellow. The nose is expressive and cheerful, with pear and white peach, tropical hints of papaya and ripe banana, and a delicate note of wildflowers and rose. The palate is fresh and light, driven by clean acidity through a crisp finish. Serve well chilled at 8 to 10 degrees.
