Description
Sobrenatural de Menade is a natural Verdejo made under the V.T. Castilla y Leon designation. The grapes are selected and picked by hand, then fermented with native yeasts and left to complete a spontaneous malolactic fermentation, which converts sharper malic acid into softer lactic acid and adds a rounded, creamy feel. The wine is aged for thirty months in used vats and oak barrels, a long maturation that allows controlled oxidative development and gives the golden colour and nutty character. It is bottled without added sulphur and refined for a further six months in the cellar before release. The continental climate of Castilla y Leon, with its hot days and cold nights, gives the fruit the acid backbone needed to carry this extended ageing. The colour is deep, bright gold. The nose shows honey, roasted nuts and dried apricot, with beeswax, orange peel and a toasted, bready edge from the long time in wood. The palate is broad and savoury, the fruit ripe and slightly oxidative but held together by a fresh, herbal thread and a long finish. Serve at 11 to 13 degrees in a large glass.

Serve with grilled meaty fish, roast pork and mushroom dishes, where the nutty, oxidative depth finds an echo. It also pairs with aged hard cheeses such as Comte or a mature Manchego, and the savoury character suits cured ham and slow-cooked poultry.
