Description
Adegas Castrobrey is a family winery founded in 1983 near Vila de Cruces in Pontevedra, on the banks of the river Ulloa, now run by its third generation. Sin Palabras Edición Especial is an Albariño from around seven hectares of vineyards aged between ten and sixty years, planted at about 100 metres on granite soils. Rías Baixas is cool, wet and maritime, and the granite subsoil with old, low-yielding vines gives concentrated fruit and a firm mineral base. What sets this wine apart is its ageing: sixty months, five full years, on its lees in stainless steel. That long autolytic contact is the key to its style. As the spent yeast cells break down they release compounds that build a creamy weight, a bready, nutty complexity and a rounder mouthfeel, all without any oak. The result is a white with volume and depth rather than sharp youth. Expect a nose of very ripe white fruit and honey with sweet spice and toasted bread, and a creamy, layered palate of white peach, roasted nuts and lemon over a saline finish. Serve at 10 to 12 degrees in a large glass.

Additional information
The creamy weight and nutty depth suit richer fish such as hake and monkfish, and lobster or scallops in butter. It also carries roast chicken and a plate of aged, hard cheese.
