Description
Silver Seal bottles unsweetened single casks in the purist tradition, and this 2002 Diamond is an eleven-year expression from the Savalle-family stills, the lighter, cleaner end of Demerara, though the glass leans toward Port Mourant character. Bottled at cask strength, 50%, from ex-bourbon, it strikes a balanced, mid-intensity tone.
The nose is fruity and floral with peach, green apple and a touch of salt, alongside an ester and glue lift, while the palate turns drier and savoury with salt, roast, dark chocolate and wood, finishing on dried fruit, a medicinal edge and more chocolate. It moves from bright fruit aromas into a leaner, wood-and-spice core rather than big sweetness or heavy funk. Light caramel, tar and raisin show in the older style. This is a patient, contemplative Demerara for drinkers who like a balanced cask-strength rum where fruity aromas lead into a dry, chocolatey finish.
