Description
From the Siegfried Herzog distillery in Saalfelden, in the Salzburger Land, comes a gin that puts on a show without a single artificial additive. The Nature Edition stays strictly plant-led, and its trick is the flower of the butterfly pea, Clitoria ternatea, which steeps the spirit a deep, dramatic violet. Add tonic or any acidic mixer and the colour swings to pink or a bright blue-violet, all of it purely botanical.
Beneath the spectacle sits a well-mannered gin. The nose is fresh and floral, juniper meeting citrus and a softly sweet bloom; the palate keeps that juniper base while floral and lightly spiced herbs play around it; the finish is clear, fresh and mild with a flower note lingering. Build it with a neutral or faintly floral tonic to show off the colour change, and a Lavender Collins is well within its range.
