Celler Tianna Negre makes Ses Nines Negre in Binissalem, Mallorca, blending Cabernet Sauvignon with the native Callet and Manto Negro. Five months in French oak give a fresh, silky red with red fruit, a floral lift and spice.
Description
Ses Nines Negre is made by Celler Tianna Negre, a family project in Binissalem in the interior of Mallorca, founded in its own winery in 2007. The red blends Cabernet Sauvignon with the island's native Callet and Manto Negro, two grapes that give lighter colour and a fresh, perfumed character suited to the warm Mediterranean climate. The wine spends just five months in French oak, a short maturation that rounds the texture and adds a light frame of spice while keeping the fruit fresh and primary. The aim is a silky, early drinking red rather than a structured one. It is bright cherry red. The nose shows ripe red fruit, a floral touch of rose and dried herbs, and a hint of spice. The palate is light to medium bodied, silky and fresh, with soft tannins and a clean finish. This is a versatile red to drink young, and it can be served lightly chilled in warm weather. Serve at 14 to 16 degrees. It suits roast pork, grilled chicken and tomato based dishes.
