Description
Serragghia is a small biodynamic estate on Pantelleria, the volcanic island between Sicily and the Tunisian coast, working within the Terre Siciliane IGT. Onda is its red from Syrah, made in a fresh, restrained natural style far removed from the ripe, oaky face of the grape. The island's volcanic soils, low rainfall and constant wind shape low-yielding, deeply rooted vines, and that combination of heat and stress is balanced by sea air to keep the fruit savoury rather than jammy. Farming is biodynamic and natural, with native yeast and minimal intervention in the cellar. The wine is aged seven months in clay amphora, a vessel that allows gentle oxygen exchange without the spice or vanilla of oak, so the result is pure, textured and mineral, with very fine tannin. At 12 per cent the alcohol stays moderate. The colour is a bright, medium red. The nose is fresh and savoury, with red berries and cherry over black pepper, dried herbs, olive and a stony, earthy note. The palate is medium bodied and lively, with red fruit, gentle grip and crisp acidity that carries a long, savoury finish. Serve at 15 to 16 degrees. It pairs well with grilled lamb, roasted vegetables and Mediterranean dishes.
