Description
Serragghia is the Pantelleria project of Gabrio Bini, worked without additions on this small volcanic island off Sicily. Fanino is a coupage of the red Pignatello and the white Catarratto, an old field practice that gives a pale, almost rose tinted red of light body and gentle grip. The vines are forty years old, planted on terraces of volcanic ash and sand that drain fast and stress the roots, concentrating aroma over sheer weight. Fermentation and ageing happen in clay amphorae, which allow slow oxygen exchange without the flavour of wood, keeping the fruit direct and the texture supple. The wine is farmed organically and made as a natural wine, unfined and unfiltered, so expect a rustic edge and a faint haze. Colour is pale ruby. The nose leads with red berries, cherry skin and dried Mediterranean herbs over a saline, earthy base. The palate is light and spiced, with soft tannin, bright acidity and a savoury, slightly salty finish that reflects the sea air. Serve lightly chilled at around fourteen degrees. It works well with charcuterie, roast pork and lighter tomato based dishes.
