Description
Senor Sotol is a Durango sotol distilled not from agave but from the desert spoon, Dasylirion, a separate high desert plant. This bottling is an uncommon ensemble of three species, Dasylirion texanum, cedrosanum and wheeleri, wild harvested around San Nicolas and the neighbouring ejidos and made by Don Juan Manuel Conde, the line standing as a nod to the generations of sotoleros who shaped the spirit in northern Mexico.
The Dasylirion hearts are cooked in volcanic stone ovens, then milled by hand with axes before a natural fermentation and distillation in a copper alembic. The result leans toward smoked cocoa, sweet tobacco and gentle vanilla, with a peppery finish and a soft sweetness underneath. Bottled at 43 percent, it carries the dry, mineral character of the Sierra and the rough beauty of the desert landscape it comes from.
