Description
Tenuta Selvadolce works in Liguria, on the terraced Terrazze Imperiese above the Ligurian coast, farming biodynamically and making wine with minimal intervention. This Vermentino is certified organic, natural and vegan, and it is shaped by an unusually long élevage: twenty months in amphora and old stone lagares, with cement also in play. That extended ageing in porous and neutral vessels, on the wine's own solids, builds real texture and a gentle oxidative maturity while adding no oak flavour. The coastal Ligurian climate and sea air keep salinity high and give the wine its savoury backbone, and full ripening lifts the alcohol to fourteen percent. It shows a subtly mature, moderately aromatic profile. The nose leads with white fruit, pear and apple to the fore, joined by dried herbs, a nutty almond note and a touch of beeswax that reflects the long ageing. The palate is broad and textured for a Vermentino, its orchard fruit carried by firm acidity and a distinctly saline, savoury finish. This is a white for the table rather than a simple aperitif. Serve at around 11 to 12 degrees, and a short decant helps it open.
