SEIS14 Gintol Gin-Sotol

SEIS14 Gintol is a gin built on a sotol base rather than a tequila or agave spirit, distilled from Dasylirion, the desert spoon plant that is not an agave but a separate desert species. The base, SEIS14 Grand Sotol, is made from Dasylirion wheeleri grown in the Mexican desert for twenty five to thirty years before hand harvest, then steamed, fermented in open wooden vats and distilled in a copper still. All the ingredients come from Mexico.
The finished spirit is the crossover step, where the sotol distillate is blended with classic gin botanicals, juniper, cardamom, fennel, orange, lemon, pepper and apricot peel. The result keeps a dry, kernel sweet sotol core under those aromatics, with juniper, cardamom and fennel framing citrus, pepper and stone fruit skin. Bottled at 45%, it works as an alternative gin in a tonic, lifted by a slice of grapefruit or lime.
