Evriviadis Sclavos makes this dry red on the island of Cefalonia from Mavrodafni and Vostilidi, grown biodynamically on vines over sixty-five years old. Aged a year in barrel, it is savoury and saline, with red berries, herb and a mineral grip.

Description
Sclavos is a biodynamic estate on the island of Cefalonia in the Ionian Sea, where Evriviadis Sclavos took over the family property in 1990 and rebuilt it along natural lines. Synodos is a dry red blending Mavrodafni, a Greek grape better known for sweet fortified wine but here vinified dry, with the local white Vostilidi. The vines are over sixty-five years old, growing on the Paliki peninsula, and their age naturally limits yields and concentrates flavour. The maritime climate and limestone soils give the wine its freshness and a distinct saline, mineral edge. Farmed biodynamically and made with minimal intervention, it is aged twelve months in barrel, the slow oxygen exchange through the wood softening the tannins and adding a savoury frame while the old-vine fruit holds its own. The colour is medium ruby, the nose showing red berries, cherry, dried herbs, pepper and a whiff of sea air. The palate is medium-bodied and savoury, with bright acidity, fine tannins and a saline, earthy finish. Serve at 15 to 16 degrees with grilled lamb, herb-roasted meats or Mediterranean vegetable dishes.
