Description
Sclavos works on the island of Cephalonia in the Ionian Islands of Greece, farming biodynamically, and Metagitnion is a white made from the local Vostilidi grape. The island's limestone soils and dry Mediterranean climate, tempered by sea breezes, give Vostilidi firm natural acidity and a saline character. The wine is made with minimal intervention and aged for twelve months in French oak from the Allier forest. Barrel ageing on this fresh, high-acid base adds texture and a gentle oxidative complexity through slow oxygen exchange, while lees contact rounds the palate. The colour is deep straw with golden tints. The nose shows ripe pear, citrus peel and dried herbs, with a nutty, savoury edge from the barrel and time. The palate is broad and textured, with orchard fruit and a saline, mineral core carried by firm acidity into a long, savoury finish. This is a white with grip and structure rather than simple fruit. Serve it at 11 to 13 degrees in a larger white wine glass.







Additional information
The texture and savoury, nutty edge suit roast chicken, grilled swordfish and pork with herbs. It also stands up to hard, nutty cheeses such as Gruyère and aged Gouda. Serve it with baked white fish in a lemon and oil dressing.
