    Sclavos works on Cephalonia, in Greece's Ionian Islands, farming biodynamically and making wine with minimal intervention. Alchymiste Red is built on Mavrodafni, a dark-skinned local grape more often seen in fortified wines but here vinified dry and natural. The island sits in a warm Mediterranean climate tempered by sea breezes, and the limestone-rich soils and biodynamic farming aim to carry the character of the place into the glass. As a natural wine it is made with native yeasts and little or no added sulphur, so the fermentation reflects the vineyard rather than the cellar, and the result keeps a wild, savoury energy. The colour is deep red. The nose shows dark berry and plum fruit over black pepper, dried Mediterranean herbs, earth and a touch of liquorice. The palate is full and savoury, with ripe fruit, fine tannin and the freshness that the natural approach preserves, finishing earthy and long. Serve at 16 degrees. It suits grilled and roast meats, herb-rubbed lamb and spiced dishes.
