Saxenburg sits in Stellenbosch on South Africa's Coastal Region, farmed by the German Bührer family since 1989. The vineyards lie between False Bay and Table Bay, where cooling maritime breezes moderate the Cape sun and help the Sauvignon Blanc hold its acidity and green fruit definition. This is the freshness that defines the style. The wine is fermented cool and rested four months on its fine lees before bottling. That short lees contact softens the mid palate and adds a subtle roundness through mannoprotein release, without masking the varietal drive, and there is no oak so the fruit and mineral character stay clear and precise. It is pale straw with a green tint. The nose is aromatic, with lemon, green apple, elderflower and white peach. The palate is crisp and dry, with cut grass freshness and a saline, mineral finish that keeps it lively. Serve well chilled at 8 to 10 degrees in a standard white glass.
