Saxenburg grows this Cabernet Sauvignon in Stellenbosch, in South Africa’s Coastal Region, near False Bay. Twelve months in French oak gives blackcurrant, plum, cedar and a firm, structured palate.
Description
Saxenburg is one of the older estates in Stellenbosch, set in the Coastal Region near False Bay where the cooling sea air tempers the Cape heat. This Private Collection Cabernet Sauvignon comes from vineyards on the slopes around the estate, where the granite-based soils drain well and keep vine vigour in check. The maritime influence is important here, slowing ripening so the Cabernet keeps its acidity and fine tannin while the fruit reaches full maturity. That balance gives the wine its structure. Ageing lasts twelve months in French oak barrels, where the wood adds cedar and spice and the slow exchange of oxygen rounds the firm Cabernet tannins. At 13.5 percent the wine is balanced rather than heavy. It shows a deep red. The nose leads with blackcurrant and plum over cedar, tobacco and a leafy, herbal note typical of cool-grown Cabernet. The palate is firm and structured, with fresh acidity, grippy tannin and a long savoury finish. Serve at 16 to 18 degrees and decant an hour ahead. It is a classic match for red meat.
