Description
Sardon is the second wine of Quinta Sardonia in V.T. Castilla y Leon, near the Duero, made predominantly from Tempranillo with small parcels of Garnacha, Cabernet Sauvignon and Malbec. The fruit comes from vines over 35 years old, some more than a century, rooted in calcareous clay and sandy soils. That old vine material gives low yields and concentrated fruit, while the limestone rich subsoil and the wide diurnal range of the high plateau preserve acidity and freshness. The estate farms biodynamically, and after a short cold maceration the wine ferments and then ages for six months in French oak followed by six months in tank, a restrained regime that keeps the oak in the background and lets the fruit lead. Malolactic fermentation rounds the texture and the brief barrel time adds polish without heavy spice. In the glass it is deep and youthful, with juicy cherry, redcurrant and plum on the nose, edged by liquorice, black pepper and a savoury, earthy undertone. The palate is full bodied and structured, with ripe but firm tannins and good length. Serve at 16 to 18 degrees, decanted, with roast meats and game.
