Description
Santa Tresa farms organically near Vittoria in south-eastern Sicily, where the warm Mediterranean climate ripens Inzolia and the aromatic Muscat clone Zibibbo on free-draining soils. Insieme is an orange wine made by fermenting the white grapes in contact with their skins, which draws phenolic compounds, aromatic precursors and a gentle tannin out of the skins and gives the wine its amber tint and textural grip. It then spends three months on its lees, where the spent yeast cells break down and release mannoproteins that round out the palate and add a subtle savoury depth. The result is a fresh, lightly structured style rather than a heavily oxidative one. The colour is pale amber. The nose leads with orange peel, white peach and apricot, lifted by dried herbs and white flowers from the Zibibbo. The palate is dry and textured, the skin tannin giving grip without weight, closing on citrus peel and a faint almond bitterness. Serve at 10 to 12 degrees in a white wine glass.
