Description
Santa Digna Sauvignon Blanc comes from Miguel Torres Chile, grown in the Valle de Casablanca, one of the country's cooler coastal areas. Morning fog and afternoon breezes off the Pacific slow ripening and preserve acidity, which is exactly what Sauvignon Blanc needs to keep its zip and clear aromatics. This is a young wine made without oak, so the fruit stays clean and direct and the varietal character is not masked by wood. Fermentation at cool temperatures protects the volatile aromas that give the grape its citrus and herbal lift. Sauvignon Blanc from a cool climate like Casablanca tends towards green, crisp expression rather than tropical ripeness, with high natural acidity as its backbone. The colour is pale with green tints, and the nose shows lemon, green apple, elderflower and a fresh herbal note. The palate is crisp and dry, with citrus fruit carried by bright acidity to a clean, mineral finish. It is a wine to drink young and cold. Serve at 7 to 9 degrees in a white wine glass. It works well as an aperitif and with shellfish, white fish, goats' cheese and green salads.
