Description
La Yegua is the barrel aged white from Sangarida, a small grower in Bierzo, in the north west of Castilla y Leon. It blends Godello with Dona Blanca, a local variety that adds body and a herbal edge. The vines grow on slate and clay soils in a cool inland climate, where wide swings between day and night temperatures preserve acidity and give the whites their citrus and mineral backbone. The wine spends twelve months in oak barrels on its lees. Slow oxygen exchange through the wood and the breakdown of the lees build texture and weight, adding a savoury, nutty complexity while the barrel contributes light spice and toast rather than obvious oak. The colour is a deep straw with a golden tint. The nose shows baked apple, pear, toasted almond and a touch of beeswax over a citrus core. The palate is broad and textured, held together by firm acidity and a stony, saline finish. Serve at 11 to 12 degrees in a large glass.

Additional information
The weight and texture from barrel ageing suit roast chicken and grilled pork. It also works with richer fish such as monkfish, and with hard nutty cheeses like aged Manchego or Gruyere.
