Description
San Cobate make this Verdejo in D.O. Rueda, in Castilla y León, from estate vines that average around 40 years across roughly 80 hectares near Gumiel del Mercado, La Horra and La Aguilera. Rueda sits on a high, dry plateau, and the wide day to night temperature swing lets the fruit ripen slowly while holding its acidity, which is what keeps Verdejo fresh and cuts through the region's warmth. Older vines carry small crops and push roots deep into the stony, free draining soils, giving concentration and the saline, mineral character the source copy describes. Time in barrel softens the wine and adds a light textural weight and a faint nutty edge without covering the grape. The colour is pale gold. The nose is lemon, green apple and pear with white flowers, and the palate is dry and taut, carrying citrus fruit, a bitter almond twist on the finish and a clear saltiness. Serve at 9 to 11 degrees in a white wine glass.

Pours well with grilled prawns, clams and plates of fresh oysters, its salinity working like a squeeze of lemon. The dry citrus line also cuts grilled sea bass and a green salad with young goat cheese. Fennel and herb dishes sit comfortably alongside.
