Saltimbanqui Verdejo 2025

Saltimbanqui is a single varietal Verdejo from the D.O. Rueda in Castilla y León, made by Aribau, a family firm with more than fifty years in the trade, in partnership with local winemaker Javier Sanz. Verdejo is the signature grape of Rueda, grown on the region's stony, free draining soils on a high plateau where the altitude and cold nights preserve acidity and give the wine its characteristic freshness. This is a young, straightforward style, fermented cool in stainless steel with no oak so the grape's own character stays intact. Careful, protective handling of the must limits oxygen contact and keeps the volatile aromas that give Verdejo its herbaceous, faintly bitter character. The wine is straw yellow with green reflections, showing green apple and citrus on the nose with white flowers, a grassy, herbal note and the aniseed edge typical of the grape. The palate is crisp and dry, with a citrus peel bite and the slightly bitter, savoury finish that marks good Rueda. Serve well chilled at 8 to 10 degrees. It suits white fish, shellfish, goat cheese and green salads.
