Salmari is a salmiak liqueur from Finland, made by Salmari International Holding and bottled at 25%. Salmiak is the salted liquorice flavour beloved across the Nordic countries, and this liqueur is built from salmiak and a clean spirit base, the rare pairing of salt and sugar giving it a strong salty character carried by a gentle sweetness that balances the tart edge. The strength keeps it smooth while letting the distinctive flavour come through with intensity.

The nose is salty salmiak with a fine sweetness and a subtle spicy note, while the palate is intensely salty with a pleasant sweet balance and a clear ammonia freshness over a slight spicy depth, finishing long on a strong salty note softened by sugar. In a drink it brings a bold salty sweet character, a savoury edge and a deep colour that few other liqueurs offer, a way to push a serve somewhere unexpected. It is best neat at room temperature so the flavours open fully, and works in cocktails such as a Salmiak Sour. Keep it on the back bar as a talking point pour and a base for adventurous spec work.
