Saint James, distilling on Martinique since 1765, built this XO Quintessence as a refined, gentle expression rather than a powerful one. At six years it clears the AOC bar for the XO tier, an aged agricole from fresh pressed cane juice on the estate's column still, bottled unsweetened at a soft 42%.
The profile favours finesse over force, with floral, spicy and apple notes on the nose, a vegetal and mildly woody palate, and a dry, lightly floral finish. Ex bourbon ageing lends vanilla and a creamy texture, the grassy cane core still recognisable beneath the polish. This is an elegant, easygoing pour built for sipping neat after dinner, suited to drinkers who like a smooth low strength agricole and are not chasing big intensity.
