Description
Saint James has distilled on Martinique since 1765, and this single cask carries the AOC stamp that only the island's cane-juice rum can wear. Drawn from the 1999 vintage and bottled around sixteen and a half years later, it shows what tropical ageing does to an agricole: the green, vegetal edge of fresh-pressed vesou has been pulled back, leaving something darker and more contemplative.
Distilled on a column still and matured in ex-bourbon oak in the Caribbean heat, it leads with nutmeg and woody warmth, then roasted notes and chocolate with a thread of cinnamon. The finish is round and dry, with cocoa lingering rather than sweetness, the wood and spice now firmly in charge after a decade and a half in cask. A composed sipper for anyone who prefers their agricole aged into mellowness.
