Saint James has distilled on Martinique since 1765 and ranks among the island's largest and most storied houses. This single cask carries a 1998 vintage and close to eleven years of age, well into AOC XO territory.
Distilled from fresh pressed sugar cane juice on a column still and matured in ex-bourbon oak, tropical ageing means this shows depth beyond its years. Expect the dry, spice forward character of mature agricole, a grassy cane backbone layered with vanilla, baking spice, leather and toasted oak. Bottled unsweetened at 43.8% from a single cask.
