Saint Eloi Spirits RUM Windwards Islands Caribbean (des îles du vent)

Saint Eloi Spirits bottles this six year old rum from the Windward Islands, the chain of eastern Caribbean islands that runs down toward the south of the arc. Its base is unusual, drawing on both molasses and fresh sugar-cane juice, giving it a foot in two rum traditions at once.

Matured in ex-bourbon casks, the molasses portion should bring vanilla, toffee and soft oak, while the cane-juice element typically adds a fresher, grassier lift over the top. At 45% the rum sits at a confident sipping strength with enough body to show both sides of its makeup. It is a characterful island blend for drinkers who like their rum with a little extra freshness.
