Description
Saint Aubin is a Mauritian estate working from fresh-pressed sugar-cane juice, though Mauritius sits outside the French AOC framework, so this is agricole-style rather than a protected agricole. This unaged white is distilled on a pot still and bottled at 40%, presenting the cane spirit raw and without barrel time.
The pot still and youth give it a rough, untamed edge. The nose is grassy and hay-like with a clear agricole signature but a strong alcoholic lift, the palate brings fruity marzipan and sugar cane wrestling with that alcohol, and the finish stays green and peppery. This is an honest, rustic white whose raw spirit is more challenging than the polished blancs of the French Caribbean, showing some of the heat and sharpness of a young pot-still cane rum. Best deployed in a cocktail where lime and sweetness can frame its grassy, fiery character rather than sipped neat.
