Saint Aubin's Rhum Epice 1819 takes the estate's Mauritian cane-juice spirit and infuses it with warming baking spice. Mauritius produces cane-juice rum in the agricole tradition without the protected term, and Saint Aubin's pot still gives the base a rounder, fuller texture for the spices to sit on.
Gingerbread and cocoa lead, with a balanced, light frame and an aromatic, fruity character that keeps it approachable. The palate echoes cocoa and gingerbread spice, finishing with a faint grape note, and the whole thing stays gentle and gourmand at 40%. It carries a soft sweetness in keeping with its spiced-arrangé style, so it works best as an easy, dessert-leaning pour rather than a dry sipper, with the estate's cane base supplying a green thread beneath the spice.
