Description
Saint Aubin distils on Mauritius from fresh pressed sugar cane juice, agricole in method if not in protected name, and this Classic Coffee takes that base and flavours and sweetens it heavily around coffee. The result reads more as a coffee liqueur than as a rum, and it is fairest to describe it that way rather than as a dry cane spirit.
Coffee, caramel, mocha and creme brulee fill both nose and palate, rich and dessert like, with the rum underneath serving mostly as a carrier for the sweetness. The finish stays on caramel and mocha. It is unmistakably a sweet, flavoured bottling and does not pretend otherwise, best poured over ice, stirred into an espresso martini, or used as a coffee accent in cocktails. At 40% it is soft and easygoing, a small after dinner indulgence rather than a serious sipping rum, and honesty about its liqueur character matters more than any cane credentials.
