Description
Sàgona produces FonFon in Tuscany, bottled under the IGP Toscana designation, from two classic central Italian whites, Trebbiano and Malvasia. The estate farms organically, and the wine is natural and vegan. FonFon is made as an orange wine, with the juice held on the grape skins so that colour and a light tannic grip are extracted from the skins into the must, before the wine spends twelve months in stainless steel tanks. The inert steel ageing preserves the bright fruit and floral aromatics rather than adding oak character, which keeps this on the fresher, more lifted side of the skin-contact spectrum. The Mediterranean Tuscan climate ripens the Trebbiano and Malvasia fully while the elevation and sea influence hold acidity. The wine is a vibrant golden yellow, with aromas of ripe apricot, peach and orange peel lifted by white flowers and a touch of almond. The palate is dry and textured, with gentle skin grip, a citrus-peel freshness and a clean, savoury finish. Serve at 10 to 12 degrees in a white wine glass. It suits grilled fish, roast chicken and green salads, and makes an engaging aperitif.
