Denmark's 1423 bottled this 2007 Dominican rum under their transparent S.B.S Single Barrel Selection, the dry, full-proof wing of the brand. The Dominican Republic usually means soft, amber, easy-drinking rons, but the S.B.S treatment keeps things honest and undosed, letting the spirit and oak speak at strength.
In the house style this is column-distilled molasses rum bottled without chill filtration at cask strength. Vanilla, toasted oak and a nutty, bourbon-like character lead, with the palate turning roasted, nutty and round before a dry finish of coffee, oak and a sharp edge. At 57% it is firm and a little sharp on first pour, rewarding a short rest in the glass or a drop of water. The result is a clean, dry Dominican that trades the usual softness for proof and structure, a solid Spanish-style rum for drinkers who like it undressed.
