Description
This S.B.S 2007 is a Dominican rum from 1423 of Denmark, whose Single Barrel Selection works in a transparent, naturally bottled style. Unusually for the Spanish-style shelf, it is made from fresh sugar cane juice rather than molasses, distilled on a column still, carried thirteen years in ex-bourbon casks and bottled at 50%.
The character is dark and roasty: the nose shows vanilla, caramel, roasted notes and oak, with a palate of vanilla, wood, oak and coffee and a finish of oak, vanilla, smoke and tobacco. For its stated strength it can feel a touch light and sharp on the mouthfeel, and a drop of water helps release the flavour and round it out. The cane-juice base gives it a slightly different texture from the usual molasses ron, and the overall effect is a charred, woody, winter-evening pour for drinkers who enjoy dark, roasted profiles without needing massive intensity.
