A rare Galapagos single cask cane juice rum from the Spirit of Rum’s Rumclub Private Selection, aged in ex-bourbon oak, sweet edged and spicy with yellow fruit, caramel, vanilla and lots of warm spice at 49.6%.
Description
Edition 60 of the Spirit of Rum's Rumclub Private Selection is an unusual one, a single cask of rum from the Galapagos made from fresh pressed sugar cane juice, agricole in style though a long way from the French appellation. It is aged ten years and bottled at cask strength of 49.6%, a rare origin offered as a curiosity for the adventurous.
Raised in young ex-bourbon oak, it shows a surprising natural sweetness for a rum with no added sugar, with yellow fruit and apple alongside caramel, vanilla and a generous run of cinnamon, cardamom and allspice. The oak gives a mildly bitter, woody edge on a dry finish, and the texture leans slightly oily. At under 50% it stays easy to sip while keeping its spice forward character intact. It suits drinkers who enjoy balanced, fruit and spice driven rums and want to explore a genuinely uncommon cask.
