Distilled on the double-retort pot stills from molasses and matured in ex-bourbon oak, the long maturation layers deep oak spice over the ester core. After a good rest in the glass it opens to massive esters, grilled pineapple and banana, olive brine, herbs and roasted, spicy wood, with a dry, woody, tropical finish. Certified unsweetened and bottled at 61.6%, it drinks as an elegant but powerful funk bomb, best neat after plenty of air or with a few drops of water.
