Stefano Novello makes this Schioppettino from old vines in Prepotto, a corner of Friuli where the variety reaches its peak. Farmed naturally and aged 30 months in foudres, it shows red berries, cracked black pepper and a savoury, peppery edge.
Description
Ronco Severo works in Prepotto, in the Colli Orientali del Friuli, where Schioppettino (the local Ribolla Nera, documented here since the 13th century) finds its truest expression. The hillside marl and sandstone known locally as ponca drain quickly and force the vine to root deep, while a cool continental climate with a wide day to night temperature swing preserves acidity and the grape's signature peppery aromatics through a long ripening. Stefano Novello farms organically and works as a natural producer, fermenting with native yeasts and adding little or nothing in the cellar. The wine then spends 30 months in large foudres, where slow oxygen exchange softens the tannins and integrates the fruit without layering on obvious oak. The result is medium bodied and savoury rather than showy. Expect a translucent ruby colour, a nose of wild red berries, plum, black and white pepper and dried herbs, and a palate carried by fresh acidity, fine grippy tannins and an earthy, liquorice and leather finish. Serve at 16 to 18 degrees, ideally decanted, in a Burgundy style glass. It suits roast beef, slow cooked pork and mushroom dishes.
