Ron Aldea Single Estate Ron Ecológico 2019

Ron Aldea makes single-estate cane-juice rum on La Palma, and this organic Ecologico is an unaged white, distilled from fresh sugar-cane juice on a column still and bottled at a robust 53%. It is an agricole-style spirit made outside the French appellation, presented without added sugar.

Unaged and high-proof, it puts the raw cane front and centre. The nose runs vegetal and buttery with fresh sugar-cane sap, opening into floral and pear notes on the palate alongside more sugarcane. The finish is oily and dry with a grapefruit-citrus bite and a faintly saline edge, hallmarks of a serious cane-juice blanc. At 53% it has presence and snap, an organic island white built for a Ti' Punch or a fresh daiquiri, where its green, dry character does the work.
