Description
Bottled by Denmark's RomDeluxe for its Collectors Series, this is a 2006 Versailles drawn from a single ex-bourbon cask and matured 16 years. Versailles is the single wooden pot still that sits between Enmore and Port Mourant in the Guyanese hierarchy: robust, tannic and built on raw sawn wood rather than fruit, and one of the last working stills of its kind.
The molasses distillate comes through woody and roasted, with dried fruit and prune over leather, licorice and a dry, dark-chocolate close. At 53.3% it is full cask strength and certified unsweetened, so the wood and bitter-sweet fruit carry the rum without any softening dosage. This is one for drinkers already at home with dry Demerara, best given time in the glass and sipped slowly.
