Description
Domaine Roger Sabon is one of the longest-established family estates in Châteauneuf-du-Pape, in the southern Rhône, with roots on the appellation going back centuries. This Prestige bottling is a blend led by Grenache with Syrah, Mourvèdre and other permitted varieties, aged for eighteen months in large oak foudres. The appellation's famous galets roulés, the rounded stones that cover many vineyards, store the day's heat and release it overnight, helping the grapes reach the full ripeness reflected in the wine's 15.5 percent alcohol. The hot, dry Mediterranean climate and the drying mistral wind concentrate the fruit and lend the dried-herb garrigue character typical of the region. Ageing in foudres rather than small barrels allows gentle oxygen exchange and softens the tannins without adding obvious oak flavour, so the fruit stays in front. The wine is deep and full bodied, with aromas of ripe plum and red berries, black pepper, liquorice and wild herbs over a leathery, spiced background. The palate is generous and warming, with ripe tannins and a long, savoury finish. Serve at 17 to 18 degrees, decanted, with roast and braised meats.
