Rock & Rhum selected this 1991 Enmore as a single cask, drawing on the EHP marque and Diamond's wooden Coffey still, the only one of its type still running. Three decades in cask and a full 55.6% make this a deep, serious expression, bottled unsweetened so the wood and age show without sugar.
Matured in ex-bourbon, it carries spice, leather and woody caramel on the nose, then leather, tar, cocoa and oak across a dry palate, finishing long on espresso, tar and cocoa. The dark, almost medicinal profile reads close to a peated whisky in places, which makes it a natural bridge for Scotch drinkers exploring rum. Expect no sweetness or softness here, just an intense, polished and contemplative old Demerara that rewards slow sipping.
