Description
RIM Sarau Tinto is a natural red from Rim Vins i Vinyes, the small Empordà winery Jordi Esteve Xifra founded in 2013 in the Catalan village of Rabós. The blend centres on native Garnacha, known locally as Lledoner, with Carignan in support, both Mediterranean varieties that give red fruit, fresh acidity and a peppery, herbal character. Empordà's far north-eastern position, swept by the dry Tramuntana wind, keeps the vines healthy and concentrates the small crop. Esteve farms organically with minimum intervention: fermentation runs on the wild yeasts present in the vineyard, the wine is made almost without added sulphur, and it is neither fined nor heavily handled, so the focus stays on bright, unforced fruit. A spell in barrel rounds the texture through gentle oxidation without masking the freshness. The colour is an intense, luminous red. The nose is balsamic and spicy, with strawberry and cherry, garrigue herbs and a cool eucalyptus lift. The palate is light to medium, fresh and juicy, with fine tannins, bright acidity and a savoury, mineral finish. Serve lightly chilled at 14 to 16 degrees. It suits grilled pork, roast chicken, charcuterie and vegetable dishes.
