Description
Domaine Rietsch farms 15 hectares organically around Mittelbergheim in Alsace, working from a Renaissance building that dates to 1576. This litre bottling blends Riesling and Auxerrois drawn from different vintages, a solera-style approach that keeps the house style consistent from one year to the next. The plots sit on clay and limestone soils, which hold water through the dry months and lend the wine its firm acid line and stony character. Fermentation runs on the grapes' own wild yeasts with minimal intervention, so the fruit and the site come through without the mask of added cultures or heavy sulphur. Auxerrois brings roundness and orchard fruit, while Riesling supplies the citrus drive and mineral backbone. The wine is pale straw in the glass, with green apple, white peach and pear on the nose over white flowers and a faint earthy note. The palate is dry and textured, the acidity fresh and the finish saline and clean. Serve at 8 to 10 degrees.

Pour it with oysters, steamed mussels or a plate of grilled prawns, where the saline finish works like a squeeze of lemon. It also handles sea bass and sole, and the fresh acidity cuts through young goat cheese and dressed green salads.
