Soledade Ipe is a Brazilian cachaca, which means it is made from fresh pressed, fermented sugar cane juice rather than molasses, the hard line that separates cachaca from most rum. It is Brazil only by law and bottled at 40%, and its defining feature is ageing in ipe, one of the native Brazilian woods that give cachaca flavours no other cane spirit can offer.
The native wood story is the most compelling angle here.
