A 24 year old Clarendon under the low-ester AHJ mark from Rest and Be Thankful, a single cask at 56% that leans dry, spicy and woody, with green apple, banana, vanilla and peppery heat rather than tropical sweetness.
Description
This is a second Rest and Be Thankful AHJ Clarendon, this time at 24 years and 56%, again from the 1998 vintage and drawn as a single cask. AHJ is one of the distillery's lighter, lower-ester pot-still marks, so the funk takes a back seat to oak and spice.
Matured in ex-bourbon wood, the long ageing has shaped a dry, structured rum. Green apple, vanilla and light fruity notes open it up, then the palate brings apple, young wood, vanilla and banana over a firm, oaky frame. The finish is spicy, roasted and woody with burnt sugar. Unsweetened and cask strength, this is not a fruit bomb but a dry, characterful sipper closer to an oak-driven Jamaican than a tropical one. It suits drinkers who like their island rum spicy and woody and are happy to let the glass open with time.
