Description
Maison Regnard was founded in 1860 and remains one of the few houses still working from the centre of the town of Chablis. This Petit Chablis is a single-variety Chardonnay from vineyards around 25 years old, planted on limestone soils that date to the late Jurassic period. That fossil-rich limestone, laid down when the region lay under a warm sea, is the source of the cool, saline minerality that defines Chablis and its satellites. The cool continental climate keeps acidity high and ripeness restrained, so the fruit stays taut and citrus-driven. Both the alcoholic and malolactic fermentations are completed, the latter softening the sharp malic acid into rounder lactic acid without dulling the wine's edge, and ageing on the lees adds a light creaminess and texture. No oak is used, leaving the fruit and the soil to speak. The wine is pale with a green tint, showing green apple, lemon and pear over white flowers. The palate is dry and precise, the finish clean, stony and lightly salty. Serve at 8 to 10 degrees.
